Pink Beet Hummus

As I’m sure it’s already obvious, I LOVE when recipes come out colorful and beautiful. I love pastas and pizzas and breads as much as the next person but recipes with just fruits and veggies always seem to come out more beautiful than the others; just like this gorgeous Pink Beet Hummus. Beets are an amazing source of vitamins and nutrients in many ways..here are just a few:

1. PARTIED ALL WEEKEND?

No worries, beets are a natural cleanse for the liver. It works as a purifier for the blood including preventing forms of cancer.

2. NUTRIENT OVERLOAD

Beets contain potassium, magnesium, fiber, phosphorus, iron; vitamins A, B & C; beta-carotene, beta-cyanine, and folic acid. WOW. Talk about a multivitamin. I have a syndrome where my body does not hold or make as much Iron as I need on a daily bases so beets being very beneficial  in replenishing iron in a woman’s body is a Godsend.

3. MAKING A BABY?

Beets are particularly beneficial to women whom are pregnant as well due to the vitamin B and iron that generates new growth cells during pregnancy.

4. NOT FEELIN FRISKY?

Beets contain high amounts of boron, which is the chemical directly related to the production of human sex hormones. Bet you’ll start making beets on anniversaries now.

5. FEELIN’ DOWN OR HAVING A BAD DAY?

I know your first instinct is that bottle of wine or chocolate bar waiting for you (mine would be too) but wait! Turns out beets are full of betaine, the same chemical compound used in some depression treatments. No need for Zoloft. It also contains tryptophan, a mind relaxing, sense of well-being and happiness amino acid. Fun right?

6. BUT THEY’RE HIGH IN SUGAR RIGHT?

While beets are high in sugar, its not like the piece of cake you snuck last night, it releases gradually and overtime and is counteracted in the sense that beets are very low in calories. Not many foods are as beneficial as beets on the vicious sugar scale.

::ALL YOU NEED::

1 lg beet

1 can garbanzo beans

1 tbsp chopped garlic

1/4 cup olive oil

1 handful fresh cilantro

1 tsp salt

1 tsp pepper

1 tbsp cumin

1/2 tbsp chipotle chili powder

juice from 1 lime

Bake beet for 40min at 400 degrees. Let cool and peel off skin. Place all ingredients in a blender and blend until smooth. Add more olive oil as needed to make smooth.

For an added snack, you can toast bread, spread on hummus, layer with half an avocado sliced. Garnish with salt and pepper and serve with a lime. Delicious and healthy afternoon snack!
