The holidays are typically stocked full creamy, fatty, sugary filled deliciousness with added on cocktails. While amazing, this can very quickly add on the LBs leaving that sinking feeling of ‘do I have to get a gym membership for a New Years resolution?’. It’s important and smart to have something around for breakfast or snacks that is quick, filling, and still delicious so you can have an alternative to a few of those holiday treats.

This Vegan Berry Baked Oatmeal Bars recipe is the perfect sweet replacement recipe this year. Between the oats, flax seed and berries these bars are crazy filling and between the berries, vanilla, and agave nectar they’re the perfect sweet tooth craving crusher. I like to keep them in the fridge and serve them cold but heated up with a little coconut or almond milk over top would be just as delicious. Plus they look like you spent a lot of time on these gorgeous bars! Don’t worry I won’t tell your family how easy they were. 1 tbsp ground flax seed

3 tbsp warm water

2 1/2 cups rolled oats

1 tsp baking powder

1/4 tsp salt

2 tsp cinnamon

1 tsp vanilla extract

1/2 cup organic raw agave

2 1/4 cups coconut milk

1 tbsp melted coconut oil

1 1/2 cups mixed berries

Preheat oven to 350 degrees F and rub a little coconut oil in a 9inch square baking dish.

Mix the ground flax seed and warm water in a small dish and set aside to thicken.

In a large bowl, mix oats, baking powder, salt, and cinnamon.

In another bowl mix thickened flax mixture, vanilla, agave, coconut milk, and coconut oil. Add wet ingredients into dry and stir to combine.

Gently mix in fresh berries then pour into baking dish.

Baking for 25 minutes covered then an additional 10 minutes uncovered until most of the liquid is gone and oats are slightly spongy. Remove and let cool.

Serve warm or cold and Enjoy!
