Tangy, crisp, refreshing, and colorful side dish perfect for summer entertaining!
So you’ve bought a giant head of purple cabbage for 1 recipe like a week ago…now it just stares back at you from your fridge slowly rendering useless. What do you do with it? You make a delicious Colorful Poppyseed Slaw! I love this recipe not only because it’s so vibrant and colorful but because it’s NOT tossed and smothered in mayonnaise like most slaws. (Ever watched mayonnaise congeal? You’ll never eat it again.) This slaw is quick and easy and the complimentary mixture of sweet and tart, making it a perfect side dish for any meal!

::ALL YOU NEED::
2 cups shredded green cabbage
1 1/2 cups shredded purple cabbage
1 1/2 cups shredded carrots
1 1/2 cup julienned Granny Smith apples
1 tbsp greek yogurt
3 tbsp olive oil
1 tbsp apple cider vinegar
juice of 1 lemon
salt & pepper to taste
In a large bowl combine green and purple cabbage with carrot and apple.
In a smaller bowl combing yogurt, olive oil, vinegar, lemon, salt and pepper. Whisk until almost frothy.
Pour sauce mixture over cabbage mixture and toss until well coated. Cover and refridgerate an hour before serving or until cold. Enjoy
